Ground Beef: A Working Mom’s Savior

My fridge is empty. Empty in the condiments, milk, and eggs-only sense of the word. But, when you have cattle, it seems there’s rarely a shortage of ground beef. If I have ground beef, I can feed my family a never-ending list of fabulous meals, despite having few other groceries.

My mother-in-law got me this great cookbook at a meats conference somewhere along the way. I rarely use cookbooks, and I never follow recipes, but this cookbook gives me ideas so we don’t get caught in the same-food-slump.

Today I browned two pounds of burger. I love having the two pound packages, because I can brown it all and use half now and half later. Right now, I’ve got a batch of chili in the crockpot and enough cooked ground beef for a pasta meal tomorrow. Another quick and easy tip is to brown your meat then put some in freezer bags and store in the freezer for later use. This saves a lot of time on busy nights.

  1. We just had taco pasta tonight. I used last night’s leftover taco meat, add a can of petit diced tomatoes or rotel, sliced olives heat thoroughly. Boil up pasta of your choice, we like whole wheat penne, throw the pasta in with taco meat & tomatoes & olives. Top off with cheese of your choice, throw it under the broiler for super bubbly cheese. I like to sprinkle with fresh cilantro and also can add crushed up doritos or tortilla chips to your own pasta for extra crunch!
